Katy Beskow (AKA LittleMissMeatFree) is a vegan food writer, cookery tutor and chef demonstrator whose passion for cooking quick, easy and ethical food knows no bounds. Katy works with a range of retailers to develop delicious vegan recipes and tours the UK demonstrating that going vegan can be cheap, enjoyable and simple.
I became a vegan back in 2006, when I was a student living in South London.
There wasn’t as much availability of vegan products on the shelves like there is now, so I started cooking up what I fancied to eat.
My housemates and friends loved it- and I found myself cooking for lots of people. I started a small blog to share recipes primarily with friends and family, which is when I started getting commissions for recipes from magazines. As well as writing, I also teach vegan cookery classes and demonstrate at food festivals across the UK.
9-5 job or full-time influencer/blogger?
I’ve recently become a full-time food writer. I started writing back in 2013 and have been building up to the point where this is my full-time job.
How do you still manage to find the right balance?
Luckily, I love what I do, so it rarely feels like work, but I make sure I set aside time for friends, family and relaxation time each week. It’s always good to turn the phone off for a few hours!
Career highlight so far?
Seeing each of my three cookbooks for the first time!
Career lowlight so far?
Having my laptop crash over halfway into a big project – eeks!
How did you come up with the inspiration for 15-minute vegan?
Between working full-time in another job, and getting more food work, I found that I had very little time to enjoy cooking for myself. I had a collection of fuss-free 15 minute recipes which I posted on the website- these proved to be really popular. I decided to contact a literary agent with the idea for my first book 15 Minute Vegan, and just a few months after, I was working with the wonderful Quadrille Publishing. There are now three books in the 15-Minute Vegan series.
