We are really enjoying our Veganuary challenge at HBC but we know that when it comes to what to eat, it can be a struggle. So we’ve rounded up a few of the best recipes from our community that will have you running for the kitchen.
One Pot Vegan Mac n Cheese
The ultimate comfort food has seen a vegan update and it couldn’t be simpler – requiring only one pan and ingredients you’ll have around. The trick to a really cheesy sauce is the Nutritional Yeast which are yellow flakes and have a really savoury cheesy flavour – they’re not expensive and we are loving them! Vegan Lentil and Cashew Loaf
Christmas may seem like a lifetime ago but roast dinners are still a Sunday essential and now you can sit down to a tasty centrepiece without any animal products. The Scientist Runs has adapted a classic mum recipe and made it look delicious, too. You’ll be fighting off the meat-eaters for the leftovers – you can find the recipe here.
Mango Edamame Sesame and Tahini Quinoa
We may or may not be slightly addicted to tahini (sesame seed paste) and not only does it make for creamy hummus but it makes a simple but delicious dressing. Amy uses tahini and sesame seed oil plus extra sesame seeds to make this quinoa salad a real delight and refreshingly filled with mango chunks. A real crowd-pleaser to brighten the winter days. Nothing says “hug in a mug” quite like a creamy, rich and indulgent hot chocolate. Lilo’s vegan Hot Chocolate is no exception as she uses rich dark chocolate and creamy oat milk to make a seriously chocolate-y drink. Enjoy this in the afternoon to keep you going or as an evening treat – the recipe is on Honey and Roots here.
Vegan Raspberry Cheesecake
Have your cheesecake and eat it, too! Without the need for any animal products. We are definitely partial to a slice (or two) of cheesecake and this raspberry creation looks delightful. Made with coconut cream and cashews for the classic ‘cheese’cake this is a beautiful and nourishing treat that is also gluten free, too. You can find the recipe on Cam’s wesbite, NLPerform.
Tahini Swirl Blondies
Did someone say vegan, flourless blondies? Yes, you heard right! These morsels of deliciousness from Eli are indulgent tasting, studded with chocolate chunks and are so creamy.
