Each March, Animal Aid’s Veggie Month provides an opportunity to emphasise the positive benefits of a vegetarian lifestyle and diet.

In this month’s HBC Cook Book we’re bringing you the most delicious vegetarian recipes being whipped up by our wonderful community of creators. Get those veggies at the ready and prepare to be wowed!

Mushroom curry with spinach & chickpeas

Michelle from The Last Food Blog is serving up this mushroom curry which is rich and creamy and really easy to make, perfect for a nice midweek meal. It’s mild enough that the kids will dig it too but it still has a nice little kick. You can add more or less chilli to suit your own taste. Get the recipe here.

Veggie Nuggets

Think you’ll be missing out on the nugget action if you go for a veggie dinner? Think again. This clever little recipe from DD at Cookie & Biscuit proves there’s no such thing as can’t have on a vegetarian month. Get the recipe here.

Fennel and red rice salad

Salad might feel like an obvious one for a vegetarian one but not when you get Mira from Every Day Cooking With Mira involved! This delicious combination includes grilled fennel, something that would work perfectly on the BBQ if only it wasn’t snowing right now…! Get the recipe here.

Greek gigantes

Fancy switching up your bacon in the morning? Go Greek and try Marialena from My Nutri Calendar‘s Giant Beans on Toast.

Vegetarian recipes with legumes, vegetables and extra virgin olive oil are very famous during the lent periods in Greece, so March is the perfect month to give this a go! Get the recipe here.
