There is no greater treat than the good old taste of Peanut Butter, it’s pretty amazing and let’s be honest we’ve all found ourselves at one point in our lives eating it straight out the jar, anyone who tries to say otherwise is just lying to themselves and maybe this recipe just isn’t for you. For all you other Peanut butter enthusiasts it can be quite the addiction, I’ll probably eat it in some form every single day so simply because I love it and since November is actually National Peanut Butter Lover’s Month it would be rude not to share our simple recipe so you can make your own spread.
It’s actually embarrassingly easy to make Peanut Butter (and cheaper) so you have no excuse next time you go to buy that jar of Skippy. What’s even better is you can play about about with different nuts and ingredients, my favourite combination is our Roasted Cashew and Vanilla Butter.
It’s a relief considering the amount of meals and smoothies I put this in, that Peanut butter is actually surprisingly good for your health. The high protein and healthy oils help with weight loss, diabetes and even Alzheimer’s disease, as long as you aren’t part of the 1% of the population that is allergic? You’re not? Good then get making. At least with this recipe you know exactly what goes in your spread and you can control the ingredients and quantities to make it is as raw and simple as needed, because we can all live and eat healthily, Peanut Butter included.
Crunchy Peanut Butter
- 1 jam jar (raid the charity shops or 99p stores)
- 1 bag of unsalted peanuts (400g)
- 1 tbsp of honey
- 1 tbsp Coconut oil
Throw your peanuts in your food processor with a teaspoon of the coconut oil and a dollop of honey and get blitzing. Keep at it, you’re looking at like 20minutes give or take depending on how you like your spread, I like it chunkier so play it by ear
Very slowly you’ll start to see it all come together and get smoother When it’s as smooth as you like it then simply transfer into your jam jar and ta da. That’s literally it, ready to enjoy.
Roasted Cashew and Vanilla Spread
- 1 jam jar
- 1 bag of cashews (400g)
- Coconut oil
- Vanilla essence
What you’ll need to do –
Roast your cashews on a baking tray for around 10 minutes at 190
Just like before, blitz the cashews in your mixer with a generous glug of vanilla essence and a teaspoon of coconut oil (taste test and add more if you want, I like mine very “vanilla-esque”). Remember, just keep mixing it, I found this one takes a little longer, but just wait.
Eventually it’s all going to blitz down into a nice paste like consistency depending how smooth or chunky you like yours Transfer into your other jam jar and there you go.
How simple is that? Now you have the, tastiest home-made spreads, and it works out cheaper than buying a jar every few days.
It’s handy to have a jar ready and waiting in the cupboard, they’re perfect for breakfast, to add into smoothies, to snack on with some apple slices, you name it. I rely on Peanut Butter a lot for a quick fix if I’m in a rush and need a snack, my go to: cut a banana into even slices and spread a little of your favourite Butter onto one slice top with another banana piece to make a healthy, tasty snack sandwich, perfect.
