Wednesday 27th June is International Pineapple Day so we thought we’d celebrate the coolest looking fruit of all time with some delicious recipes from the community. From smoothie to salsa, this fancy fruit is incredibly versatile and can add a tasty tang to any meal.

Perfect for boosting your immune system and promoting good digestion if you’re feeling a little under the weather.
Pina Colada Chia Pudding
Could there be a better pineapple treat for the summer? This Pina Colada Chia Pudding from The Naughty Nutritionists is the perfect (and surprisingly grown up) way to get the taste of pina colada in a healthy dessert. And if you love the taste of coconut Jenni and Mimi recommend adding 1/3 cup unsweetened shredded coconut or coconut chunks into the chia pudding, or even sprinkling some toasted flakes on top. Delicious!
Gluten-free Pineapple Fried Rice
For a show-stopping yet super easy main, try this pineapple fried rice from Strength and Sunshine. This exotic recipe is a family favourite in Rebecca’s home – they even fight for the leftovers! Made with pre-cooked rice this can be whipped up in a few minutes and is a great healthy recipe for lunch or dinner.
This versatile pineapple salsa from Essentially Emma is the perfect side to jazz up some fresh fish, or as a delicious addition to tacos, burritos and salads. It’s super quick to make and will keep for a few days, so you can make a huge batch of it and snack happy all week long. For extra flavour, Emma recommends leaving it in the fridge for a few hours before serving – this will allow the salt to draw out all the juices.
