Foodie Spotlight: Toral from The Urban Kitchen

I am a nutritional scientist and chef, specialising in cancer prevention via nutrition and lifestyle. I have a good grounding of all aspects of medicine and physiology with a BSc in Cell Biology from UCL (I  originally started Medical school) and an MSc in Nutritional Medicine from University of Surrey.

I’m passionate about people living healthy and happy lives by optimising their nutrition and lifestyle. Eating healthily is all about balance and I believe in a strong 80/20 approach with eating healthily 80% of the time and enjoying treats 20% of the time. I don’t believe in cutting out food groups unless you have an intolerance to the food, but prefer to include a wide range of different ingredients to ensure that you get a wide range of micro-nutrients.

Most of my food is veg-centric with small amounts of good quality fish and meat, including at least two or more portions of fruit and vegetables at each meal. I am currently writing my first book explaining the science behind cancer preventing foods and illustrating this with some of my healthy yet delicious recipes.

My dietary lifestyle

I don’t pigeonhole myself and would say that I am a healthy eater 80% of the time. I don’t eat much bread or gluten – not because I am gluten intolerant but because I like to vary my nutrient intake. I only eat bread that has been proved in a traditional way, as I find this is easier to digest. I prefer to eat seasonally as the nutrient levels are higher in seasonal food.

That’s a tough one as I am constantly creating new recipes! My current favourite is poke taco which was fast and full of seasonal flavours.
