Foodie Spotlight: Rebel Recipes

Hi I’m Niki and I have a plant based food blog called Rebel Recipes. I love to create delicious, plant based food and I’m passionate about healthy living. I’ve always loved cooking and eating food that makes me feel great; I use mainly light, natural, plant based and organic where possible.

Creating inspiring recipes…

My recipes are really easy to follow as I’m completely put off by an exhaustive ingredient list and complicated instructions. It’s all about inspiring people with accessible and ultimately delicious plant based food. I started my blog and Instagram just over a year ago now and despite being really hard work juggling work, blog, Instagram and everything else I have loved every minute of it and have made some incredible connections and had some amazing opportunities so far.

Living a plant-based lifestyle

I would define my diet as plant based. I’ve been a vegetarian (in the main) for many years but I’ve found being plant based quite liberating. I used to have a million ‘diet’ rules to live by but now I eat anything and everything  as long as it’s real food – ie mostly vegetables, fruit, pulses, nuts and seeds and organic. I don’t worry about fat or carb content anymore and feel great.

 When it comes to breakfast…

I like to create pretty breakfasts and take a pic for my Instagram feed, so I much prefer having time for breakfast and I get up extra early to do so. Having said that I still never have enough time in the morning. However if I know I’m only going to have a few minutes in the morning I would prepare some overnight oats the night before with chia, almond milk, nut butter and berries (in a jar so that I can take them with me).


My favourite recipe is my Super Green Cauliflower Rice and Pea Curry because it’s one of the easiest and most delicious curry recipes – my love for curry knows no bounds and I could eat it for every meal so this is perfect as it contains some of my favourite veggies; cauliflower my all-time favourite and loads of green veg like peas and spinach which makes it an amazing green colour. And really good for you of course.

My favourite food blogger

There are so many talented and inspiring food bloggers but my favourite is definitely Sarah Britton  (My New Roots)  because everything she creates looks and tastes amazing. I completely agree with her dietary ethos of eating whole natural foods.
