Foodie Spotlight: Nourishing Amelia
If somebody had told me a couple of years ago that I’d be cooking every day, creating my own recipes, and I’d be really passionate about wholesome, clean, healthy food, I’d have thought they were mad! Having said that, I’ve always eaten with a conscience – I became a strict vegetarian when I was 8 years old – but apart from that I didn’t think too much about where my food came from and the effects it had on my body.
A couple of years ago I was battling with depression and an anxiety disorder; I felt deeply unhappy and unhealthy, and I had terrible stomach pain, sickness and other unpleasant symptoms such as dizziness, bloating, and chronic fatigue. After lots of tests I was diagnosed firstly with PCOS, or Polycystic Ovary Syndrome, and then a few months after that I was diagnosed with Coeliac Disease, an autoimmune disease that causes serious illness if even the tiniest amount of gluten is absorbed into the body.
I started educating myself about nutrition
I now understood why I’d felt so unwell for so long, and when I began to do my own research into these two conditions I soon realised that if I wanted to be well, I needed to look at the food I was putting into my body. I started educating myself about nutrition and how what we eat has a direct impact on how we feel, not just physically but also mentally – it seems so obvious now! I overhauled my eating habits, gave up processed foods and dairy (the hormones in dairy products can play havoc with our own hormone levels) and made a transition to a completely plant-based diet. Almost immediately I noticed my body responding, and as I started to feel healthy again I began experimenting in the kitchen, creating delicious meals, tasty snacks, and sweet treats that were all healthy, gluten-free and vegan, but also wonderfully tasty.
I love my food!
And now – well I can honestly say that I love my food! I don’t skip meals or count calories, I don’t deny myself treats, and I enjoy eating the most fresh, nutritious meals that really satisfy my taste-buds and my body… and I feel great! Almost all of those unpleasant and life-limiting symptoms have disappeared, I feel confident in my skin and have a positive outlook on life. I’m so passionate about this way of life, and I’m excited about the possibility that I could help others by sharing what I’ve learnt.
My favourite recipe from my blog is my quinoa pizza. It’s the easiest, cheapest, quickest and most delicious pizza recipe, plus it’s vegan, glutenfree and totally healthy! I love to make it for friends and family who are a little skeptical about this way of eating because as soon as you say the word ‘pizza’ they’re interested! It wins everyone round too – I’m obsessed with it!
