Foodie Spotlight: Meghan from Naturally Meghan

I’m Meghan, a 21 year old vegan from North Wales with a passion for healthy living. I love sharing my meals on Instagram to show people that a plant-based diet doesn’t just consist of salad!

My dietary lifestyle

First and foremost I’m vegan, so I don’t eat meat, fish, dairy, eggs or honey – I also minimise my consumption of refined sugar and processed foods for health reasons. I have IBS so I try and avoid foods like gluten, beans and lentils, coconut milk and certain veggies because I know it’ll result in a lot of pain on my part! My diet mainly consists of carbohydrates (lots of fruit and veg and grains) with some healthy fats and protein sources thrown in (avocados are my true love!). In saying that, I’m definitely not going to turn down a vegan doughnut if I’m offered one! I’ve struggled with anorexia and orthorexia in the past so I try and strive for balance. I eat whole foods the majority of the time so I don’t panic if I eat something that isn’t necessarily nutritious (like chocolate because let’s face it, chocolate is life!).

My favourite recipe…

It’s hard to choose but I think my favourite recipe is probably my Vegan & Gluten-Free Cacao Buckwheat Pancakes – bananas, chocolate and pancakes are three of my favourite things so the combination of all of them is just divine!
