Foodie Spotlight: Meghna’s Whole Foods Kitchen

I started cooking at the age of eight and have never looked back! Cooking up a storm in my kitchen and feeding people is my major passion in life. I have always been interested in eating nourishing food but my concept of healthy eating really evolved after moving to London from Bangalore in 2013. I now have a sugar free kitchen and focus on cooking with natural, whole and organic ingredients.

Coming across an IG community has brought me great joy, friends and inspiration. I now spend time working on my photography and food styling skills, creating innovative rainbow food and finding fun ways to sneak in nutritious and alternative ingredients in my daily meals. 6 months ago I moved to Hong Kong and started studying to become a nutrition consultant as I realised this was my passion and I wanted to learn more. I am looking forward to finding new ways to pursue my healthy food dreams!

My dietary lifestyle

Mainly plant based using whole foods, organic and as local as possible.  I also enjoy full fat organic dairy products, eggs, free range lamb and chicken and line caught wild fish as part of my overall healthy diet. I love rainbow vegetables and fruits and have daily vegetable juices or smoothies as well as salads. I prefer a more gluten free diet with less grains, favouring quinoa, amaranth and organic millet. I have a refined sugar free kitchen and choose dried fruit, xylitol and high quality maple syrup as a sweetener.

Healthy chocolate cake – My favourite recipe would have to be my healthy chocolate cake. It is really hard to make a vegan cake that is also gluten free and sugar free. After a lot of trials and errors I created this outstanding chocolate cake made with beetroot and almonds with aquafaba and chia seeds to give it a lift. I also slathered it with the healthiest sweet potato chocolate frosting ever! It is only sweetened by dates which I think is pretty amazing! I love how healthy and nutrient dense it is but also so pretty and decadent!
