Foodie Spotlight: Jo from Healthy Eating Jo

Hi everyone! My name is Jo and I’m a plant based, healthy eater from Australia. I love creating whole food recipes and refined sugar free treats for my Instagram, and recently launched my first website and blog. I first joined Instagram to hold myself accountable for eating well, and to be inspired by others to stay on track, after years of trying every ‘diet’ under the sun. Cutting out the garbage and just eating real food turned out to be the simple answer. But all in moderation of course! I quickly found my passion for food and photography grow, along with my love of interacting and engaging with others who were interested in the same things as me. I’m a mum of two kids, and step-mum to two more, so I really enjoy finding ways to prepare quick and delicious meals, meal prep, and encourage my meat-eating family to enjoy more plant based meals, and improve their overall health and wellbeing. I recently gave up my job in the corporate finance world after 20 years, to spend more time with the kids and pursue my love of food, photography, recipe creation, and working with others in an area that I am passionate about.mag

My dietary lifestyle

I am a plant based eater, so my meals are made up of lots of fresh whole foods, colourful vegetables, fruit, plant protein, tofu, legumes, good low GI carbs and healthy fats. I gave up refined sugar almost three years ago and haven’t looked back. I mainly replace sweetness with stevia, or other natural alternatives if required. I drink nut-based milks, and as I workout a lot, I supplement with plant-based protein powders for muscle growth. We have a history of bowel cancer in my family, so I also eat a lot of fibre filled foods, which also help fill me up!

My favourite recipe…

My favourite recipe is probably one of my raw mini cheesecakes, like my Peanut and Coconut Bounty Cheesecakes, as they contain  peanut butter and coconut! Two of my favourite things! I love these as they are  portion controlled, the whole family loves them, and they are stored in the freezer, so they’re always there for me when I need a healthy treat. My freezer is my treasure chest of treats! But pancake towers and chia parfaits other specialities.
