Foodie Spotlight: Happy Skin Kitchen
My name is Elisa and although I am originally Italian, London is now my home. I started my blog Happy Skin Kitchen after suffering from hormonal acne for a few years. During this period I tried numerous creams and antibiotics and after seeing no improvements I decided to take the matter into my own hands and try to clear my skin through a more holistic approach.
Since then I gradually moved to a mostly whole-food plant-based diet which has proven to the best choice I made for my skin and my overall health as well. It wasn’t easy and it didn’t happen overnight as I have always been a serious food lover! I decided that I would still have tasty food but with a “skin friendly” spin. I got seriously inspired by so many amazing food bloggers out there and taught myself how to cook delicious, healthy meals that my skin will thank me for. The aim of my blog is to share all I have learnt in the past three years about food, nutrition, exercise and living a healthy lifestyle which has improved my skin and hopefully will help other people too!
My dietary lifestyle
I follow a mostly plant based diet with a great focus on whole, unrefined foods. It might sounds like a cliché but “you are what you eat” is really true when it comes to my skin! To keep my skin happy I try to eat as many fresh fruit and vegetables as I can. I get plenty of nutrient rich whole grains like quinoa, millet and buckwheat, skin loving fats like avocado, nut and seeds, and I always try to include some plant protein like tempeh, tofu or beans. For me this is not a diet or a restrictive way of eating, it has become my way of life, a way that makes me look and feel my best every day.
My favourite recipe…
Chocolate Caramel Almond Nougat Slices. This is possibly my favourite recipe because it’s my go-to treat whenever I crave something sweet and chocolate-y. These bars are so rich, decadent and satisfying and yet they are made with wholesome and skin nourishing ingredients.
