Foodie Spotlight: Frei-style

Hi everyone, I’m Verena and I live in Switzerland with my hubby and my twin girls. I started my Instagram journey last year as a travel account in the first place since we went on a round the world journey for two and a half months. However, I was always passionate about healthy food and I love photography. So when we came back I shared more pictures, got more experimental and the travel blog transformed into a food blog! I love that I can share my passion and inspire others to live a healthy lifestyle. I want to make sure my kids know how to make the right choices; I want people, and especially families, to see that you don’t have to miss out on any delicious flavours with a plant based diet.

My dietary lifestyle

I’m following a plant based diet, so I eat lot of fresh fruits and veggies. We are trying to buy a lot of the products local, but since we also love tropical fruits, we treat ourselves to those from time to time. I cut out refined sugar and white flour, and substitute them with coconut blossom sugar or maple syrup, for example. Our meals are always colourful, we truly love to eat the rainbow! Having such a variety of fresh food is delicious, and also appealing to the kids.

My favourite recipe…

We really love parfaits like this layered beet and berry smoothie parfait, and making layered family parfaits with plant based yoghurt or chia pudding, which has become a bit of a Sunday tradition. So this is one of my favourites that I made recently. It’s pretty, delicious and it has some hidden veggies as well, so it’s super healthy, plus the maca gives a nice energy boost.

To make the smoothie, you’ll need: 1/2 beet (raw or cooked), coconut yoghurt, 1/2 frozen banana, handful soaked cashews, handful mixed frozen berries, 1 tbs maca powder and agave syrup to sweeten if needed.

Mix all the ingredients in a high speed blender (I used my Vitamix) – add water or coconut water if you like it to runnier.

For the lighter layers I just used more coconut yoghurt mixed with the smoothie base.

Layer in a jar and top with fresh fruits and coconut flakes.
