Butternut Squash and Carrot Pancakes: Rough Measures

Pancakes1“Some things need testing, a bit of tweaking here and there, a little bit of adding and subtracting. Mixing, making, eating. Jotting down tweaks, re-doing the recipe, scribbling all over your notes. Some things take some work. Some things work the first time around, but some things don’t. This weekend was a lot of trial and error. A lot of washing up the same bowls, heating up the same gadgets. Only for it to continuously not work. I take my hats off to anyone who creates a recipe book…” Read more…

Quinoa Almond Porridge: Nourishing Amelia

“I’m totally addicted to porridge, it’s without a doubt my favourite breakfast and I even sometimes have it for lunch. However, because of my coeliac I find I don’t digest oats that well (they are gluten free but have a similar structure to gluten) so often go for alternatives like buckwheat flakes or millet flakes. Something I’ve been enjoying recently is quinoa porridge…yes, you can make porridge out of quinoa and it’s amazing so don’t knock it until you try it!” Read more…

Quick Lentil Vegan Curry: Thandi Eats Vegan

Quick-Lentil-Curry-1

“Since the beginning of my plant-based journey, lentils have been my go-to pulse. I love that they’re nubbly and gritty texture. They add a lovely bite to vegan dishes. I had a friend’s boyfriend joke that if you were going to a vegans’ house for dinner, you were pretty much guaranteed lentils. Admittedly, I’ve eaten more lentils now than I’ve ever eaten in my life. Jokes on him though.. Because lentils are awesome!” Read more…

Skillet Pan Turkish Lamb: The Pea and the Spoon
lamb-5
“I had some lamb shoulder to use and seeing as it was a week night I wanted something I could chuck into the oven. When I last visited Istanbul for work, I bought a little set of spices and herbs. It contains the much valued saffron, red pepper flakes, mint and chilli. What a great combination of flavours in one little wicker basket! … I had to have it.” Read more…

Classic Vegan Hazelnut Brownies: Sailing Through Fitness

IMG_9405“I’ve been meaning to make a brownie recipe for a while now. Mainly cuz brownies are God’s gift to the people, and I somehow haven’t cooked up a vegan version yet?! If you’ve read my other blog posts, you probably know by now that as a child I used to make myself a little plate with TEN Betty Crocker Two-Bite brownies to munch on in front of Nickelodeon’s finest: 8 Simple Rules (clearly the notion of control and moderation were lost on me). The worst thing is I really thought that abusing brownies was a thing of the past, that I had moved on, I was no longer a certified brownie addict. ” Read more…
