I used to eat absolutely EVERYTHING and loved junk food. 5 years ago I was diagnosed with an autoimmune disease (ulcerative colitis) and began following the Specific Carbohydrate Diet to go into remission.

The diet is very strict and is completely free from grain, gluten, lactose, starch, soy and refined sugar.

At first, it was incredibly hard to stick to the diet, but as I began to get healthier, and more creative with my cooking, it became much easier. I now can’t imagine going back to eating normally because I feel so good and started my blog to inspire others to do the same.

I spent over 8 years working at a bank in the city.

I loved the energy of working on a trading floor, but I struggled to show any passion or enthusiasm for finance and instead spent my days dreaming about cooking.

When I first started Every Last Bite, I would spend every weekend cooking non-stop to create recipes for it, and every evening after work writing and editing posts for my blog.

Earlier this year, I finally decided to make a change and quit banking and I haven’t looked back.

Cauliflower is a miracle vegetable.

I have used it to make everything from rice for paella and risotto to bread, pizza, mash, whipped cream and even cheesecake!

I am so proud of this recipe because it’s incredibly unique.

The Lemon Cream tastes exactly like whipped cream!

Its velvety smooth and creamy tasting, but is actually made of steamed cauliflower and is completely dairy free, Paleo, Refined sugar-free and vegan. I’ve served this to so many people who have devoured it before realizing that it’s actually made of vegetables!

I usually make 1 recipe a day for Every Last Bite as well as 1 recipe for one of the few websites I am a contributor for.

I try to squeeze in a workout in the afternoon before spending the rest of the day editing photos, writing recipes and coming up with new recipe ideas.

I work all day, from 7am to 9pm but I absolutely love it and wouldn’t have it any other way.

The saying is cheesy but true when you love what you do, you will never work a day in your life.

Deb Perelman (Smitten Kitchen) was the first food blog I ever discovered. I absolutely love the way she writes, and she was the first person that made me realize that food blogging could actually be a career.
